As you might have noticed I like to travel around the world a bit with my Fakeaways and this one is no different… travelling to South America in particular Brazil.
You could do this with any part of the chicken, drumsticks, Maryland or breast… I chose to use boneless chicken thighs… if you cook with the bone in the cooking temperature and time may vary.
I love going to Brazilian bbq restaurants and drew my inspiration from them.
BRAZILIAN TEMPERO BAIANO CHICKEN
1 tsp ground cumin
1 tsp dried oregano
1 tsp dried parsley
1 tsp turmeric
1 tsp ground coriander
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp cayenne pepper, or to taste
Juice of 1/2 a lime
2-3 tbsp olive oil
6-8 boneless chicken thighs
In a small bowl combine all the marinade ingredients
Put chicken into a resealable plastic bag, add the marinade, squeeze out all the air you can before sealing
Massage marinade into the chicken and leave in the fridge for 1-2 hours, you can leave it overnight
Place thighs, spread flat, in the airfryer basket.
Set the temperature to 220c/440f and cook for 10 to 15 minute each side depending on how thick the thighs are. If your chicken has the bone in I would lower the temperature to 200c/400f and cook for 5-7 mins more on each side. Don’t worry about the crispy bits they are the best bits.
We served ours with a vegetable and chilli konjak rice.
