Yesterday was wet and windy so we decided a stew was just what was needed… comfort food.
African Beef stew with cabbage is a low carb, keto-friendly, hearty, comforting meal loaded with beef and vegetables that will keep you warm and satisfied.
I adapted this from a soup recipe because I wanted something a little more substantial.
African Beef Stew with Cabbage

750g/1.5 lbs stew beef
3 tbsp olive oil
Half a medium sized savoy cabbage chopped
1 tbsp tomato paste
1 bell pepper, (red, yellow or orange), chopped and deseeded.
2 shallots, chopped
2 garlic cloves, chopped or minced
1/4 to ½ tsp cayenne pepper
1 tsp dried thyme
2 carrots, chopped
1 tsp salt to taste
pinch of black pepper for browning the meat
pinch of salt for browning the meat
500ml/2 cups beef stock

Chop the cabbage, shallots, garlic and bell pepper.
Cut the beef into chunks, if not already cut.
Turn on the instant pot onto sauté
Add the olive oil, then add the beef.
Add salt and black pepper and stir the beef till it is browned.
Add the shallots and garlic and cook until beginning to soften.
Add the bell pepper, tomato paste, cayenne pepper, thyme, carrots and a little more salt.
Pour in beef stock.
Press the manual mode on the Instant pot and set it to 45 minutes.
After cook time has finished do a quick release.
Add more salt and spices if needed.
Stir in the cabbage and turn on sauté and allow to cook for 20-25 mins
