Chicken Leftovers – Chicken and Mushroom Pilaf

Had roast chicken yesterday and wanted a quick meal tonight and this was quick and very tasty.

Keto Chicken and Mushroom ‘Rice’Pilaf

This makes a total of 4 servings.

1 cup hemp seeds

2 tablespoons butter

3-4 medium mushrooms

1-2 cloves of garlic, minced

½ cup chicken broth

Leftover chicken cut into chunks

Handful of chopped parsley

Salt and pepper to taste

Slice mushrooms then add to pan with butter on medium-high heat.

After a few minutes add the minced garlic

Once mushrooms are soft, add chicken broth, hemp seeds and parsley to the pan.

Mix well and turn heat to medium low.

Once you’re happy with the consistency, add the cubes of chicken to heat through.

When heated turn the pan off and dish out.

You can garnish with some chopped parsley
