Been trying to find an alternative to bread for a long time and finally came up with these made with coconut flour. They have a great texture, can be frozen and can be toasted for crispness.

Ingredients
4 large eggs or 5 medium
1/4 cup olive oil
2 tbspof milk of your choice
1/4 cup coconut flour
1 tsp baking powder
1/2 to 3/4 tsp salt according to taste
1 1/2 tsp onion granules, I ground mine down to the fineness of caster sugar
I have also made garlic and coriander ones to eat with a curry. I use 1 1/2 tsp of each
Mix all dry ingredients in a small bowl
In a larger bowl put eggs, milk and oil and beat together until we’ll mixed, I find it easier to use a hand mixer as it make final mixture a lot smoother
Add dry ingredients to egg mixture and mix until smooth
Add 1/2 mixture to a preheated oiled waffle maker, mine is a full size one so you need to measure out approx 2 tbsp for a mini one, making sure you have good coverage
Cook for approx 4-5 mins, but this depends on your waffle maker.
You can either freeze these or store them in the fridge for up to 3 days. Toast for reheating and extra crispness.
