Boulangère “potatoes”

A few weeks ago we went for a meal and as part of the main course we had Boulangère potatoes and I thought I can Keto that and I succeeded on the second attempt.

Boulangère “potatoes”

• 1 large kohlrabi or turnip or celeriac

• vegetable or beef stock

• 25g butter

Preheat the oven to 180c/fan160c /gas 4. Lightly butter a shallow 2 litre ovenproof dish. Slice the kohlrabi as thinly as you can, or use a mandolin if you have one. Layer in the buttered dish, seasoning between layers.

Pour stock over the potatoes until just below top layer. Dot with butter and cover with foil. Bake for 1 hour or until tender.

Remove foil and cook for a further 15-20 mins to crisp top. You could at this point sprinkle with grated cheese of your choice.
