Love coffee cakes, ones that actually contain coffee, and I also love the texture of a gooey brownie this hits both targets.
Gooey Espresso Bars
1 cup almond flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup granulated sweetener of your choice
2-4 teaspoons espresso powder according to taste
1/4 cup cocoa powder
1 cup cashew butter or almond butter or tahini
1/2 cup butter, melted
1 egg
1 cup dark chocolate chips, I used stevia sweetened chocolate
Preheat oven to 175c/350f
In a mixing bowl combine all of the ingredients except the chocolate chips until a thick brownie like batter forms.
Fold in half the chocolate chips.
Place lightly greased parchment paper in an 8×8 baking pan and spread the batter evenly in the pan.
Sprinkle with the remaining chocolate chips and Bake for 20-22 minutes.
Remove from the oven allow them to cool in the pan for at least 10 minutes so they set.
Lift out of tin using paper, allow them to cool completely before cutting.
Serve with cream, can be served warm, they will be very gooey, but they will taste great.
