One of the salads we had with the BBQ’s this weekend. Just perfect as it has bacon. It’s great with maple syrup, really goes with crispy bacon, but just as good without it, just sharper, so that ingredient is definitely optional.
4 rashers streaky bacon
1/2 white cabbage, thinly sliced
1/3 red cabbage, thinly sliced
2 large carrots, grated
1/4 cup Coriander/cilantro, finely chopped
180g/1 1/4 cups cherry tomatoes, cut in half or quarter according to size.
Place the bacon slices in a single layer in a large nonstick frying pan set over medium heat.
Turn until browned and crispy.
Transfer to a paper towel to drain.
Once cool enough to handle, crumble the bacon.
In a large bowl, combine the white cabbage, red cabbage, carrot, coriander, bacon and tomatoes.
Toss with the dressing and serve
2 tbsp fresh lime juice
2 tbsp extra virgin olive oil
1 tsp honey or maple syrup (optional), you can use a sugar free maple syrup.
1/8 tsp salt
In a small bowl, whisk together the lime juice, olive oil, honey/maple syrup (if using) and salt.
Carbohydrate 5g (if using honey or maple)
