FRIDAY NIGHT SALMON

I love one sheet meals, so quick and easy after a day at work. This is a great salmon one. You could also do a variation on it by giving the salmon a Parmesan crust.

ROASTED GARLIC AND BROCCOLI SALMON

Serves 4

INGREDIENTS:

4 portions of salmon, skinned

2 heads of broccoli, washed and cut into florets

3 tbsp avocado/coconut/e.v. Olive Oil, your choice

2-4 cloves of garlic minced, depending on how garlicky you want it

1 1/4 tsp salt

1/2 tsp ground black pepper,

1  sliced lemon

Preheat oven to 220c/450f and line a baking tray that will fit your ingredients

Arrange the salmon pieces on the lined baking sheet, leaving a few inches between the portions.

Drizzle 1 tablespoon of oil over the fish. Spread the minced garlic cloves evenly over the salmon next.

Next, sprinkle the fish with 1/2 teaspoon salt and 1/4 teaspoon ground black pepper. Finally, arrange the sliced lemon (if using) on top of the salmon pieces.

Next, combine the clean broccoli florets 2 tablespoons of oil, 3/4 teaspoon sea salt and 1/4 teaspoon ground black pepper in a medium bowl.

Toss to evenly coat the florets. Arrange the broccoli on the baking sheet around the salmon pieces.

Bake in the oven for 15-18 minutes or until fish is done and the broccoli florets are slightly golden on the ends.

FOR PARMESAN CRUSTED SALMON

Crust ingredients

1 1/2 Tbsp low carb mayonnaise

1 1/2 tsp lemon juice, this is approx 1 lemon

1 clove garlic , minced/grated

Salt and freshly ground black pepper

30g/1/4 cup slightly packed finely grated parmesan

30g/1/4 cup ground almonds/almond meal

1 Tbsp chopped fresh parsley

1 1/2 tsp lemon zest, this is approx 1 lemon

1/4 tsp dried thyme

Zest and juice the lemon

Thoroughly mix all ingredients together

Coat the top of salmon portions

Bake in preheated oven, 200c/400f, for 15-18 mins or until fish is done and the broccoli florets are slightly golden on the ends.
