KETO CHOCOLATE ESPRESSO PUDDING

I just wanted a quick pudding tonight and created this after seeing loads of different recipes on the net. Of course I had to include my beloved Tahini. It’s a bitter chocolate pudding but you can sweeten it with Stevia for Keto or maple syrup/honey for Paleo. I topped it with some ground pistachios and salt flakes. Even my partner thought it was yummy and they’re not a pudding person.

KETO CHOCOLATE ESPRESSO PUDDING

Serves 2

2 tbsp Cacao Powder

1 1/2 tbsp Coconut Oil

1 tbsp Almond or Cashew Butter

1 tbsp Tahini

1-2 tsps Espresso Coffee

1/2 tsp Vanilla Extract

4-8 drops Liquid Stevia (optional), if Paleo you could add maple syrup or honey.

Thick cream for serving (optional), will increase the carbs

Add all ingredients together in a small bowl.

Stir ingredients together until the consistency of pudding.

Serve in espresso cups topped with a little cream, if using

Alternative:

You could top with some sea salt flakes and/or ground pistachios (pictured)
