I love sausage meat stuffing with my Christmas dinner and afterwards with the cold turkey and pickled onions. This one is really tasty and has a great texture.
Not sure of the carbs but don’t think it can be that high, and it is Christmas.
LOW CARB SAUSAGE MEAT STUFFING
500g/1 pound pork sausage meat
250g/1/2 pound mushrooms
1 stick celery
1/2 onion finely chopped
250g/1/2 pound cauliflower
20g/1/8 cup chopped walnuts
1 1/2 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 teaspoon pepper
120g/1 cup grated Parmesan cheese
4 eggs
Lard for cooking
Slice or chop vegetables
In a food processor spread cauliflower, Be sure the cauliflower is shredded finely.
Brown sausage meat, celery and mushrooms in a skillet.
Drain off grease.
In a large bowl, combine meat mixture, cauliflower, nuts, spices, Parmesan cheese and stir well.
In a small bowl, beat eggs.
Add the eggs to the large bowl and mix well.
Transfer the stuffing to a sprayed large casserole dish.
Bake at 165c/325f for around 40 minutes.
