Gingerbread men and cookies are a Christmas tradition and children love to make and decorate them. These ones are made with cream cheese as I like the texture of cream cheese cookies.
GINGERBREADMEN
2 tbsp/1 ounce cream cheese
85g/3 ounces butter, softened
6 tbsp coconut flour
2 tbsp granulated sweetener of choice
2 tsp ginger spic
1 tsp Mixed spice or all spice or pumpkin spice
1 tsp vanilla extract
Instructions
Preheat oven to 175c/350f
Cream together butter, cream cheese, vanilla, spices and sweetener until light and fluffy.
Mix in coconut flour, 2 tbsp at a time. You’ll need to knead the last 2 tbsp in.
Roll out the dough to about 1/4″ thick between 2 pieces of baking parchment
Cut into desired shapes and layout on tray, they don’t spread
Bake for 12 minutes, or until the edges are golden brown.
Remove from the oven, and let sit for at least 15 minutes – this will allow the cookies to set up. If you try to move them before this, they will fall apart!
Decorate with royal icing etc.

ROYAL ICING
5 T Confectioner’s sweetener of choice
2 tsp powdered egg whites
2 T lemon juice (2 carbs)
a couple drops vanilla and colouring if you want
Mix all ingredients together and use to decorate totally cooled biscuits
I like the use of cream cheese too.
