My love of chilli comes from when I was pregnant, many many years ago to say the least, I craved chilli and the hotter it was the better. Nowadays I don’t like it too fiery but still like a little bite in it.
LCHF/KETO/PALEO CHILLI CON CARNE
Serves 4
500G/1LB Minced/ground beef
1 onion, diced
1/2 red bell pepper, sliced
2-3 cloves of garlic
1 can sugar free chopped tomatoes + 1/2 can water/beef stock
1/2 tsp cayenne pepper, add more if you want it hotter
1 tsp paprika
3 rashers streaky bacon, cut into 2cm pieces
Salt and pepper to taste
E.V. Olive oil for cooking
Heat oil in a pan
Add onion and cook until they start to soften
Add pepper and cook for 1-2 mins
Add bacon and cook for 1-2 mins
Add garlic, spices and seasoning, cook for 2-3 minutes
Add beef stir in well and cook until it browns
Add tomatoes and stock/water, bring to the boil and simmer for 25-30 mins
Taste to check spice and add more if you want it hotter, if you add more spice you will have to continue cooking for a further 10-15 mins.
Serve with grated cheese or guacamole or both but watch you carbs.
