Today I have been looking after my great niece and we decided to bake… here’s the result. We used a food processor but you can mix these easily by hand. I didn’t have any confectioners sweetener so I improvised with the frosting. Within an hour 4 were gone… oops!
Coconut Flour Paleo Cupcakes Recipe
½ cup Coconut flour, plus 1 tbsp if you think it needs it.
1/2 cup Honey/ Sugar-Free Maple syrup
1/3 cup Coconut oil, measure when melted
2 tablespoons coconut or almond Milk
1 teaspoon Vanilla Extract, optional
½ teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Apple Cidet Vinegar/ Lemon juice
¼ teaspoon Salt
Combine all ingredients in a large bowl and stir well until thoroughly mixed or use a food processor.
Let it rest for a few minutes and it will thicken a little.
Use a spoon to scoop batter into muffin cups.
Bake at 350f/175c degrees for 15 to 20 minutes or until golden brown.
60g/ 2oz Sugar-free Chocolate
3-4 tsp/15-20g cream cheese
5-7 drops Vanilla Stevia
Melt chocolate in a bowl over a pan of hot boiled water
Still over water mix in the cream cheese until fully incorporated and smooth
Stir in the drops of stevia
Remove bowl from the pan and allow to cool for a few minutes
Spread over cakes
Allow frosting to set before eating
