Pork belly is one of mr favourite cuts of pork and it’s great for marinating, it seems to absorb flavour without losing its own.
SUBTLY ASIAN MARINATED PORK BELLY
MARINADE
3 tbsp coconut aminos (soy sauce substitute)
1 tbsp e.v. Olive oil
1 tbsp honey
1 tsp fish sauce
1 tsp lemon grass paste
1 tsp ginger paste
1 tsp garlic granules
1/2 tsp onion granules
1/2 – 1 tsp chilli sauce (depending on taste)
6-8 pork belly slices
Mix all marinade ingredients in a bowl.
Put in the pork belly slices and marinate for at least 1 hour, longer is better.
Make sure they are well coated with the marinade, I always massage it into the pork.
Heat a skillet with a little olive oil in it, just enough to coat the bottom.
Fry the pork for 3-5 minutes each side, then place skillet in a preheated oven at 190c for a further 10 minutes
Serve with either stir fried or roasted vegetables
You can adjust the marinade ingredients to suit your own taste.
