FAT HEAD DOUGH

This is so versatile. You can make crackers, pizza, sausage rolls, breakfast/lunch pockets and the list goes on. I use it a lot and people are starting to come out with sweet recipes for it.

Fat Head Dough

Ingredients
• 170g grated mozzarella
• 85g ground almonds
• 2 tbsp cream cheese (full fat)
• 1 egg
• salt to taste
• ½ tsp flavourings of choice optional (onion powder, garlic granules, herbs)

Instructions
1 Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.
2 Stir then microwave on HIGH for another 30 seconds.
3 Add the egg, salt, and flavourings, mix gently.
4 Place in between 2 pieces of baking parchment and roll out to desired thickness. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.
5 Shape cut or fill as desired, Place on a lined baking tray.
6 Bake at 220C/425F for 5 minutes on each side, or until browned on both side and crisp. May be longer if thicker dough.
7 Cool on a wire rack and keep in an airtight container in the fridge. IF the weather is cool, you may store the container on your pantry for up to 3 days.
