CHIA PUDDINGS

If you want an alternative to eggs for breakfast these are a great idea. Made overnight in the fridge and enough for a few days so a good grab and go recipe. Make on a Sunday night and you have breakfast for half the week. It may be a texture you will have to get used to but it is worth it. I love them but my partner doesn't.

Vanilla Chia Pudding

Ingredients
• 250 ml milk of your choice (almond, cashew)
• 1/3 cup chia seeds
• ½ teaspoon vanilla extract
• 1 teaspoon maple syrup

Instructions
1 In a 500ml mason jar, add all ingredients, screw on the lid tightly, and shake all ingredients together.
2 Set jar in the fridge for 8 hours, or overnight.
3 In the morning, pudding will have gelled together and thickened. Top with your favourite fruit and take your chia pudding to go.

Coconut Chia Pudding

Ingredients
1 can coconut milk (a carton of it will not turn out the same)
1/3 cup chia seeds
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1-2 tablespoons honey(optional)
Berries

Instructions
1 Pour the coconut milk into a small bowl.
2 Add the chia seeds and stir well with a fork or whisk.
3 Add the vanilla extract, almond extract, and honey (I enjoy this recipe with closer to 2 T. of honey!). Stir well, until honey is evenly incorporated.
4 Pour mixture into mason jars or other airtight containers. Seal well. Refrigerate the pudding overnight or at least for a few hours.
5 Serve pudding with berries on top. If packing it in lunch for work, in the morning put frozen mixed berries on top. Then the berries are thawed by midday and the pudding is lightly infused with berry flavours.

Cappuccino Chia Pudding
 
Ingredients
• 1 cup strong brewed coffee, decaf or regular, chilled
• 1 cup unsweetened almond milk or milk of choice
• 1/2 tsp coffee extract
• 1/2 cup chia seeds
• sweetener or choice to your own taste (I use vanilla liquid stevia and needed just ¼ tsp) Maple syrup or honey would also work(optional)

2 Set jar in the fridge for 8 hours, or overnight.
3 In the morning, pudding will have gelled together and thickened.
