Crispy Pork Fake-away

Tonight’s fakeaway is based on South East Asian cuisine with some strong aromatics.

Crispy Pork Belly

500g/1 pound pork belly

500ml/2 cups water

1-2 tbsp garlic and ginger paste

2 tbsp soy sauce substitute

2 tsp fish sauce

1 tsp powdered lemongrass

1/2 tsp salt

1 tsp ground black pepper

2 bay leaves


Cut pork belly into 3-4 chunks/rashers if not already done


Place all other ingredients in inner pot of Instant pot/pressure cooker and mix together


Add the pork, no rack, seal and cook on high pressure for 15 mins


Release pressure naturally for 10 minutes then quick release rest of the pressure


Care fully transfer pork to a cooling rack and allow to drain onto a dish for 10 minutes


Empty juices into a jug as this an be used to flavour ‘rice’ ‘noodles’ later
Cut rasher in 2 and place in crisp lid/air fryer basket


Place basket on crisp lid rack set to 200c/400f for15 minutes or until fat has crisped


Serve immediately


Serve with either stir fried cauliflower rice or konjack rice or konjack noodles flavoured how you like.
