Pan Fried Fennel and Corgette

Usually I use fennel in a tray bake but I wanted to serve this with the Spicy Fennel Chicken

2-3 fennel bulbs

1-2 courgettes/zucchini

1 medium red onion

2 tsp lemon pepper

1 tsp salt

1 tbsp lemon juice

2 tbsp olive oil

Chop all the vegetables into wedges and place in a sealable plastic bag.

Add all the other ingredients and toss the vegetable in the mix until fully coated.

Heat a pan on a medium heat and fry vegetables anti they have softened, don’t worry about the charring it adds to the flavour.

Serve immediately
