Home made Jerk paste for Chicken

I love jerk chicken but find all the manufactured pastes, I always use paste as the powders just taste powdery, have added sugars. This is the paste I used on my Fakeaway Jerk Chicken.


5 scallions/spring onions

1 tbsp chopped fresh thyme

2 teaspoon salt

1/2 teaspoon black pepper

1/2 – 1 tablespoon sweetener, I used sukrin gold. Adjust this to taste.

2 teaspoon ground allspice/mixed spice

1 teaspoon nutmeg

1 teaspoon cinnamon

2 scotch bonnet peppers

85ml/1/3 cup soy sauce substitute

2 tablespoon olive oil

60ml/1/4 cup Apple cider vinegar

1 onion

Up to125ml/1/2 cup water, you can add lemon or lime juice to this.

2 cloves garlic*

1 teaspoon grated ginger*

*or 3 tsp garlic and ginger paste

Place all ingredients in food processor or nutribullet and blitz until a paste, adjust water to get consistency you want… I like my paste thicker so don’t add as much water/lemon/lime juice.
