Mid-week Cheesyness

Using up leftover chicken tonight so having it with a mixed Cauliflower and Broccoli cheese. Didn’t have any bacon so this one is without.

Keto Broccoli/Cauliflower Cheese

500g/ 1 pound broccoli or cauliflower florets(you could do a mix of both.

125g/4 oz of cream cheese

1 tsp Dijon mustard

125g/4 oz of shredded cheddar cheese

50g grated Parmesan

4 strips of cooked streaky bacon

200 ml/ 3/4 cup double (heavy) cream

salt and pepper to taste

Preheat oven to 350 F

Cook the broccoli on the stove top until tender-crisp, drain well

Put broccoli in a greased dish

Mix together in a saucepan over a low heat the cream cheese, cheddar cheese, Parmesan, cream, mustard, salt, pepper and bacon. Mix well.

Pour over the cauliflower and top with some extra grated cheddar if you wish.

Bake for 15-20minutes, until bubbly and cheese is golden.
