Breakfast Poser – Granola

My partner made a strange comment yesterday “I’m fed up with eggs and bacon for breakfast” now I have sympathy with eggs but how can anyone be fed up with bacon?

So today I had to come up with an alternative… Granola

Here’s the recipe I came up with from what was in my store cupboard… you can adapt granola to fit with what you have or can afford or like.

Jules’s Low Carb Granola

15-17 walnuts roughly chopped

15-17 Brazil nuts roughly chopped

30g/1/3 cup ground almonds

25g/1/4 cup coconut flakes

30g/1/3 cup pumpkin seeds

30g/1/3 cup sesame seeds

25g/1/4 cup ground chia seeds

30g/1/3 cup unsweetened dried cranberries roughly chopped (optional)

1 1/4 tbsp sweetener of your choice

60ml/1/3cup sugar free syrup, I used monk fruit golden syrup

15g/1 tbsp melted butter

Mix all the dry ingredient together in a bowl

Melt the butter and add the syrup to it, pour over the dry ingredients and mix in well

Spread evenly over a lined baking sheet

Cook for 15 mins in the middle of an oven preheated to 175c/350f

After 15 mins break up the granola with a fork and return to the oven for 5 mins

Repeat last step being careful not to over brown the granola

Allow to fully cool

Place in a bag and bash out any large lumps, I used a steak tenderiser

Store in an air tight container

Serve with Greek yogurt
