Do you ever have one of those days when you haven’t planned your main meal, you get home from work and go to the fridge and think… “what’s for dinner?”
Well the other night was one of them and I ended up making a one pan meal
MEDITERRANEAN STYLE MINCE
500g/1 pound minced/ground beef
1 large onion, finely chopped
2 cloves garlic, minced
1/2 large egg plant, cubed
1 courgette, cubed
1 red bell pepper, large diamonds
1 can chopped tomatoes
1 large handful Basil
250ml/1 cup beef stock
1 tsp paprika
1-2 tbsp Olive Oil
In a wok heat oil, add onion and slowly fry until tender.
Add garlic and red pepper and fry for 2-3 mins
Add beef and brown thoroughly
Add courgette and egg plant and fry for 1-2 mins
Add tomatoes, stock basil and paprika
Bring up to a slow boil and simmer for 25-30 mins
Serve.
You could serve this with cauliflower rice or you could top with grated cheese
