Saw a picture of these today on a Facebook page but no recipe so I did my own and added the bacon
These can be used as a lunch, a snack, part of a packed lunch or a buffet nibble.
Bacon and Brie Bites
Makes 8-10
Dough:
170g mozzarella, grated
2 tbsp cream cheese
1 lg egg, beaten
85g ground almonds, almond meal
1 tbsp ground seeds of your choice
1 tsp baking powder
Filling:
1 slice of Brie cut into cubes, size of your choice
1-2 rashers of bacon, streaky, cut to slightly larger than the cheese
Preheat oven to 200c fan/210c/ 400f
Put mozzarella and cream cheese in a microwaveable bowl and zap on high for 60 seconds
Remove from microwave and beat with a metal spoon, return to microwave and zap for another 20 seconds
Allow to cool for a few seconds then beat in the egg
Fold in all the dry ingredients until thoroughly combined
Flatten out dough to desired thickness cut into squares
Place dough square in your hand pour a cheese cube and a piece of bacon in the centre and seal off. After folding in all sides and covering cheese I lightly rolled each one in my hands to improve shape.
Put on a lined baking sheet and cook for 15-20 minutes, until golden brown
Serve hot or cold, can be reheated in microwave, store in fridge.
