MORE LUNCH IDEAS

Here are the lunches for the beginning of this week. Some more fathead sausage rolls and pizza rolls or you could call them pinwheels. This is my usual recipe for fathead dough and I use it for pizza bases, sandwich rolls, breakfast pop tarts etc. I sprinkled a few Fennel seeds over the sausage rolls for a bit of added flavour.

Fathead Pizza Rolls

Fathead dough is used to create pizza rolls without all of the carbs!

The Dough

170g Mozzarella Cheese Shredded (1 1/2 cups)

2 tbsp Cream Cheese

85g almond Flour/ground almonds (3/4 cup)

1 Egg

1/2 tsp garlic powder

1/2 tsp onion powder

The Filling

2 tbsp tomato paste

Mozzarella Cheese Shredded, to taste

Black Olives Chopped, to taste

Pepperoni Chopped, to taste

Garlic, grated, to taste

Preheat oven to 200c/400f

Line baking tray with baking parchment.

Melt the mozzarella and cream cheese in the microwave for 60 seconds, stir then zap for 20 seconds more, stir again.

Stir almond flour, garlic powder, onion powder and egg in with the melted cheese mixture to form the dough.

Flatten the dough out into a rectangular shape on the parchment paper.

Spread tomato sauce across the surface of the crust.

Evenly distribute the rest of the pizza toppings over the sauce.

Starting with one edge of the crust, gently roll into a log.

Using a sharp knife, cut into slices.

Lay slices flat on top of parchment paper covered cookie sheet.

Sprinkle with a little more mozzarella or Parmesan if you like.

Bake for 10-15 minutes, until dough becomes golden.
