Wanted something quick tonight so I made these fish cakes, I actually made The Thai ones. Really quick to make and cook and very low carb.
Tuna Fishcakes
1 200g/7 ounce can Tuna Fish (I prefer the tuna in oil), drained
1 Egg beaten.
1 Tbsp Mayonnaise (homemade if possible)
2 Tbsp Parmesan cheese (can omit for diary free)
1 1/2 Tbsp Golden Flax Meal
2 Tbsp Almond meal or almond flour
1/8 Tsp Sea Salt
1/4 Tsp Garlic Powder
1/4 Tsp onion powder
2 Tbsp Olive oil for frying
Drain tuna extra well.
Mix all ingredients, except olive oil, then flake the tuna into the bowl and combine using your hands
Heat oil in Frying pan over medium high heat.
Divide the mixture in half and shape into patties
Fry for about 2- 3 minutes on each side until browned and crusted.
It helps to not flip it until the side forms a browned crust.
Serve with salad or cheesy cauliflower mash
You can change the flavour by omitting the Parmesan and adding:
lemongrass paste chopped chilli and some ginger for Thai style.
Serve these with a spicy cauliflower rice.

hi sounds lovely. where would I get golden flax meal? Is it linseed?

Got mine in Aldi but you could use any ground seed available… flax, linseed or even a mixed seed
