COFFEE SOMETIMES JUST NEEDS A BISCUIT/COOKIE

Sunday morning cup of coffee just begs for a biscuit(cookie) and these have the flavour of the coconut macaroons my mum used to buy for Sunday tea. With just 1.3g carbs each one makes them a great treat I think, also great for a packed lunches for children and allowable in UK schools as they are nut free.

Sorry about the rubbish drizzling technique.

Keto Coconut Biscuits (Cookies)

Makes 15

Ingredients

45g/1/3 cup Coconut Flour

35g/1/3 cup Unsweetened Shredded Coconut

1 tbsp Stevia Powder

1/2 tsp Baking Powder

Pinch of Salt

70g/2.5 oz Melted Coconut Oil (70 g)

1 Egg

1 tsp Vanilla Extract50g/2oz melted chocolate for drizzling or dipping (optional)

Preheat the oven to 180c/ 350f
Mix all the dry ingredients to a large bowl
Add the wet ingredients to the dry ingredients and mix into a dough
Roll the dough into 1-inch (2.5 cm) balls and place on a parchment paper. Flatten with a fork in one direction, and then the opposite direction.
Bake for 13 – 15 minutes, or until really golden brown.
Allow to cool for 5 minutes on baking sheet, and then transfer to a wire rack to cool completely.

If you prefer crispier cookies store them in the freezer or fridge as they are soft at room temperature.

Total Carbohydrate 2.8g

Dietary Fibre 1.5 g,

Net carbs 1.3g

    Coconut flour and shredded coconut are both 1/3 of a cup yet one says 45g and the other says 35g which I don’t get; please can you explain? Thanks.
