Often my partner and I have to leave early to get to work and sometimes don’t get the opportunity to eat breakfast. When that is the case we grab one of these. They are also good for packed lunches, be warned a lot of UK schools won’t allow these as they contain nuts.
INGREDIENTS
• 1 ½ cups packed, pitted dates chopped(350 g)
• ⅓ cup raw cacao or unsweetened cocoa powder (35 g)
• 1/2 cup whole Chia seeds (75 g)
• 1/2 cup unsweetened shredded coconut(45 g)
• 1 cup chopped walnuts (125 g)
• 1 tsp vanilla extract
• 1/4 tsp sea salt
INSTRUCTIONS
Put cacao, coconut and Chia seeds into a food processor and pulse to mix
Put the dates, nuts, vanilla and salt in blender and purée with the dry ingredients until they form a thick paste.
Line a square baking pan with parchment paper. Firmly press the mixture into the pan, pressing tightly into all corners.
Alternatively put the mixture between two sheets of baking parchment and press or roll out using a rolling pin.
Place in the fridge for at least a few hours up to overnight.
Lift out of the pan and cut into 16 bars.
Store in an air-tight container in the fridge or freezer.
