ONE MORE SNACK ATTACK

I love dips and crackers and both these take very little effort and can be done quickly.

KETO FRIENDLY GARLIC DIP AND CHEESE CRACKERS

Garlic Dip

4-6 Cloves garlic

125ml/1/4 Cup apple cider vinegar

250ml/1 Cup extra virgin olive oil

60ml/1/4 Cup water

1 Tbsp Dijon mustard

1/4 Tsp sea salt

1 Pinch black pepper. To taste

Fresh Herbs (Optional) parsley, chives, coriander for example.

Combine all of the ingredients in a blender and blend until it’s creamy and smooth, except herbs if using. You should start with 4 cloves of garlic and add more after you taste the dressing, if you feel like it’s not strong enough. Add the herbs and stir in gently.

Cheese Crackers

5 Emmental/gruyere cheese slices

Flaked sea salt

black pepper

Cut each slice into 4-6 squares

Arrange the squares on a lined baking sheet about 1/2cm apart

Sprinkle with salt and pepper

Bake in a pre-heated oven at 200c for 9-12 minutes until just beginning to turn light brown

Cool on a cooling rack and they will really crisp up.

You could try sprinkling with cayenne or paprika
