This is a really great summer meal. I know theres mayo in it but you could make your own, sometimes with the horseradish sauce i have to use normal store bought but you’re not using that much. i have tried making my own horseradish sauce…Disaster. My partner won’t normally eat salmon as they say its tasteless but they love it this way.
Poached salmon with dill and horseradish sauce
2 salmon fillets, skin on
2 Tbspmayonnaise(full fat)
1clovegarlic, finely minced
1 – 1 1/2 Tbspchopped fresh Dill (you can use dried Dill)
2 – 3 tsp sugar free Horseradish Sauce
1 tsp Dijon Mustard
1 – 2 tsp lemon juice
Salt and freshly ground black pepper
- Bring a shallow pan of water to the boil then place salmon in skin side up cook for 3-5 minutes (depending on how you like it) Carefully turn to skin side down and continue cooking for another 3-5 minutes.
- Place all the ingredients for the sauce in a bowl and combine well. store in fridge until needed.
- When salmon is cooked serve with Green Beans, Broccoli or vegetables or vegetables of your choice and generously drizzle/pour source over salmon.
