SOMETHING SWEET AS A TREAT

Most of what I’ve put on here has been savoury but sometimes we deserve a treat. These quick and easy paleo cranberry orange muffins are gluten-free and grain-free. They are really light with a good texture and really tasty.

Paleo Cranberry Orange Muffins

Cook Time 25 minutes

Total Time 35 minutes

Servings 8 – 9 muffins

Ingredients

• 200 grams almond flour/ground almonds

• 1/2 teaspoon baking soda

• 1/8 teaspoon fine salt

• zest of 1 orange

• 3 eggs

• 1/4 cup honey

• 2 tablespoons ghee melted

• 2 tablespoons fresh orange juice

• 1/2 cup dried cranberries

Instructions

1 Preheat oven to 325f/165c and grease or line muffin tin.

2 Combine dry ingredients and orange zest in large bowl. Combine wet ingredients in medium bowl. Stir wet ingredients into dry ingredients, then fold in cranberries.

3 Fill muffin cups to 3/4 full.

4 Bake for 20 – 25 minutes, until golden brown and toothpick inserted in center comes out clean. Cool on wire rack
