BREAKFAST POP TARTS

We go camping and like to take some ready prepared food with us for quick meals. These are great tasting and can be filled with either a sweet or savoury filling.

Breakfast Pop Tarts

• ¾ cup shredded mozzarella (85 g/ 3 oz) – I use the ready grated packet variety

• ⅓ cup almond flour or ground almonds (33 g/ 1.2 oz) + 1 tbsp flax meal

• 2 large eggs, scrambled

• 2 tbsp unsalted butter or ghee (28 g/ 1 oz)

• 3 slices bacon, cooked (48 g/ 1.7 oz) or you can use ham

Pre heat oven to 200c

Cook the bacon and eggs.

Prepare the dough:

Melt the shredded mozzarella in the microwave ( zap for 1 minute, stir, if it needs longer do it in 10sec bursts)

Add the almond flour mix.

Stir until the dough is well-combined.

Roll out between 2 sheets of baking parchment and divide into 2 rectangles

Place filling on one half of each rectangle, fold over the other half and seal (I roll the edges a little)

Place on a lined baking sheet, brush with melted butter or ghee and bake for 20-25 minutes, until nicely browned. After 15 minutes I always flip mine over carefully to make sure both sides are done.

Eat straight away or allow to cool on a rack and store in an airtight container.

To reheat – heat a pan and place pop tart on it for a few minutes flip and do the other side. Not tried in a toaster yet but looks as if it would work

Ham and Grated Cheese

Cheese and Onion

Leftover Chilli

Streak and Onions

Spinach and Feta

Stewed Apples or any other stewed fruit… it then becomes a healthy McApple pie
