Sandwich rolls

I made these for breakfast this morning. The original recipe had unsweetened apple sauce in it which I really didn’t fancy for a savoury roll so in my recipe I have replaced this with Tahini, has the same binding effect but does not impact on the taste. I also have had the idea to make them into scones by adding a little Stevia and some dried fruit. Great served with some sugar free homemade jam and clotted cream, cream on top of course.

KETO SANDWICH ROLLS

1/2 cup almond flour
1/2 cup tapioca flour
1/2 tsp salt
1 tsp baking powder
2 large eggs, beaten
1/4 cup Tahini

Pre-heat oven to 175c/350f
In a bowl mix all the dry ingredients
Add eggs and tahini and mix until well combined
Place 4 greased cooking rings/cookie cutters on a lined baking sheet
Divide mixture between the 4 rings
Bake for about 15 minutes or until a toothpick comes out clean
Cool on a rack slightly, if you want them warm, before cutting.

Scones made… just added 5-8 drops of Stevia, 1 tsp vanilla and a handful of raisins. They taste great.
