TAHINI CHOCOLATE CAKE

I made this Yesterday, I made up the recipe the other night when I couldn’t sleep adapting it from another recipe, first chance to try it. Nice texture quite moist and the frosting is super easy. It only has 4.5 net carbs. Might try it with 3 eggs next time, to make it more brownie like.

Tahini Chocolate Cake
1 1/2 cups Tahini
1/3-1/2 cup maple syrup
2 large eggs, beaten
1 tsp vanilla paste
1-2 tbsp cacao powder
1 tsp baking soda
1/2 tsp salt *
3/4 cup sugar free chocolate chips

Frosting
1 pk full fat cream cheese(approx 250g)
1 1/2 tsp vanilla paste
5-8 drops vanilla Stevia

Pre-heat oven to175c/350f
In a food processor mix all ingredients, down to asterisk, until smooth
Stir in chocolate chips using a spatula
Pour into a lined baking tin and smooth out making sure it is an even thickness all around
Bake for 18-24 minutes
Remove from oven and place tin on a cooling rack
Allow to completely cool before removing from tin and cutting to make 2 cake layers.

Frosting

Get cream cheese to room temperature and place in a bowl
Beat until smooth and creamy
Add vanilla paste and Stevia
Beat until well mixed in

Spread on one layer of cake and top with the other, if there is enough you can use this to top the cake.
