Going with the theory that everything tastes better with bacon, recently I made this:
LEEKS, SPING ONION AND BACON
for 2 people
4-6 rashers of streaky bacon
2 leeks (1 per person)
6 spring onions
1 tbsp olive oil
1, Prepare vegetables and cut bacon into 1/2 cm strips
2. heat oil in deep frying pan with lid
3. add bacon bits and cook until edges start to go crispy
4. add vegetables and sauté stirring frequently
5. turn down heat and cover with lid, cook until all vegetables are tender.
