COFFEE AND WALNUT MUFFINS

Usually i adapt recipes but today, for the first time, i started from scratch and made up my own recipe. Surprisingly it turned out well so i thought id share it with you.
COFFEE AND WALNUT MUFFINS
200g ground almonds

1/2 tsp baking soda

1/4 tsp salt

1-2 tsp espresso powder (depending on how strong you like your coffee flavour)

3 eggs, beaten

1/4 cup honey

2 tbsp butter, melted

2 1/2 tbsp strong coffee, brewed and cooled, preferably espresso

1/2 cup chopped walnuts, add more if you want to
1. Pre heat oven to 160c/325f

2. Put all in gradients in a bowl and mix until combined (do not over mix)

3. Fill muffin cases unit 2/3-3/4 full

4. Bake in the oven for 20mins, or until a toothpick comes out clean

5. Cool on a rack then enjoy
