Poached Salmon with Dill and Horseradish Sauce

This is a regular week night meal for us as it is quick and easy to prepare. I will put a picture on at a later date (next time we have it)
POACHED SALMON with DILL – HORSERADISH SAUCE
Serves 2

Ingredients:

2 Medium size Salmon fillets skin on

2 Tsp Cider Vinegar

Water

Sauce:

Handful of chopped Fresh Dill

Handful of chopped Fresh Chives

250ml Mayonnaise

The next 3 ingredients can be adjusted to your taste

1 TBSp Horseradish. You can use ready made Horseradish sauce but this adds some sugar content, though not a lot.

1/2 TBSp Cider Vinegar

1 tsp mustard
Instructions:

1. Place 2 cm water and cider vinegar in a deep frying pan and bring to the boil.

2. Add Salmon, reduce heat so water is gently simmering, cover and cook for 10 mins

3. While Fish is cooking (or this can be done earlier and put in fridge in a covered dish) mix all the ingredients together for the sauce.

4. when Salmon is cooked to your liking remove from pan with a slotted spoon and serve with green beans or vegetables of choice.
