Constructing new smoker today for use tomorrow… what shall we smoke?

I use this style of smoker: I find it easy to use and you can get a hell of a lot in it. Was tempted by other styles or even a cabinet but always seem to come back to this. 

So tomorrow it’s a meat feast… yum
