Another Friday Night Fakeaway

Travelling to the Caribbean for this one.

Really love Jerk Chicken but the traditional ones contain a lot of sugars so I decided to make my own Jerk Paste, which is also really great on pork or lamb (goat).

Jerk paste

5 scallions/spring onions
1 tbsp chopped fresh thyme
2 teaspoon salt
1/2 teaspoon black pepper
1/2 – 1 tablespoon sweetener, I used sukrin gold.
2 teaspoon ground allspice/mixed spice
1 teaspoon nutmeg
1 teaspoon cinnamon
2 scotch bonnet peppers
85ml/1/3 cup soy sauce substitute
2 tablespoon olive oil
60ml/1/4 cup Apple cider vinegar
1 onion
Up to125ml/1/2 cup water, you can add lemon or lime juice to this.
2 cloves garlic*
1 teaspoon grated ginger*
*or 3 tsp garlic and ginger paste

Place all ingredients in food processor or nutribullet and blitz until a paste, adjust water to get consistency you want… I like my paste thicker so don’t add as much water/lemon juice.

Jerk Chicken

6-8 chicken thighs or 5-6 chicken breast cubed

1 batch of jerk paste

Place chicken in a ziplock bag. Pour paste over chicken and massage in, making sure all chicken is smothered. Seal bag and leave in fridge for at least 1 hour to overnight.

Take out of bag and place thighs flat in the air fryer basket. Depending on thickness of the thighs cook for 7-10 mins each side.

If using a skillet just add a spray of oil and fry for 8-12 mins each side

Do not worry about getting burnt bits on the chicken it’s all part of it.

Keto Rice and “Peas”

Cauliflower rice, ready cooked

1 onion finely chopped

400g mushrooms, chopped small (the peas)

1 tsp dried coriander

1 tsp dried parsley

In a frying pan heat 1 tbsp olive oil. Fry mushrooms and onions until soft. Add cauliflower rice and herbs and cook until thoroughly heated through.

I serve with some yogurt mint dip and a few milder chilli strips
