Friday Night Takeaway – Fried Chicken

Every week we try to have a substitute takeaway this week KFC fried chicken. I used fibre flour and ground psyllium husks as a sub for all purpose flour, not strictly Keto but you could sub that for other flours.

CRISPLID FRIED CHICKEN THIGHS

2/3 cup fibre flour

1/3 cup ground psyllium husks

salt and pepper to taste

1 tsp onion powder

1 teaspoon smoked paprika

3 eggs beaten

8 skin-on chicken thighs

cooking spray

Add all dry ingredients to a shallow bowl. 

Beat eggs together in a second shallow bowl.

Dredge chicken in fibre flour mix and shake off excess. Dip chicken in beaten egg, allowing any excess to drip off, and then dredge in the fibre flour mixture again.

Spray basket with cooking spray Place chicken in basket. I did 4 at a time.

Place CrispLid trivet in inner steel pot of pressure cooker and place basket with chicken onto trivet.

Set CrispLid on top of inner steel pot and plug in. Set to 350°F (180°C) and cook chicken, turning at least once, until a golden crust forms and a thermometer inserted near the bone reads at least 165°F (75°C), 25 to 30 minutes. Lift the lid using the handle and set it on the silicone trivet.
