Usually I make curry’s from scratch but I saw this curry paste in
Lidl and noticed it was pretty low carb so thought I’d give it a go.
I got 3 servings out of this.
CHICKEN TIKKA MASALA
2 large chicken breasts or 4 chicken thighs
1 large onion (chopped)
1 1/2 tbsp oil (I used rice bran oil)
1 pot of Pataks Tikka Masala Paste Pot (you get 2 pots in a pack) pictured
50ml water
100g chopped tomatoes (tinned, 1/4of a tin)
1 tbsp tomato paste
100ml double/heavy cream
75ml water
Heat oil in a pan or wok, add onion and fry until they soften
Add paste and 50ml water, stir until mixed well and cook for 3-5 minutes
Add chicken, coat in the sauce and cook until Sealed on all sides, about 5 minutes
Add the tomatoes and tomato paste and cook for 2-3 minutes
Add cream and 75ml of water, stir in well and cook until mixture stats to bubble, stirring occasionally
Turn down the heat a little and allow to simmer for 15-20 minutes, stirring occasionally until sauce reaches the thickness you desire
Serve over cauliflower rice
