I bought 2 punnets of Blueberries on Saturday and had only managed to eat one so I thought I’d make some jam with the other one. I’m going to use this in some fathead danish’s for Easter breakfast.
You can use any berries with this recipe
BERRY JAM
250g berries of your choice
Granulated sweetener of choice to taste, I used a mixture of erythritol (1 tbsp) and vanilla Stevia (5 drops)
3 tbsp water
1/2-1 tsp vanilla extract
3/4 – 1 tsp agar-agar
Put berries, sweetener, water and vanilla extract in a saucepan and bring to the boil stirring occasionally
Allow to simmer for 10 to 15 mins until the fruit is soft and has broken down
Allow to cool for 5 mins
Add the agar-agar 1/4 tsp at a time until you get desired thickness, remember it will thicken up and set more as it cools
Taste and adjust sweetness to your taste with more liquid Stevia if you want.
