I saw a recipe for a skillet cookie but it had peanut butter in it and I personally consider peanut butter as something that was sent to punish us… the root of all food evil… as you are gathering I hate the stuff. It tastes foul, dries up you mouth and smells like a used cat litter tray. So I made my own recipe for a Skillet cookie.
These are chewy cookies not crunchy. This is a great recipe for making with children, but don’t let them handle the hot skillet.
TAHINI AND MAPLE CHOCOLATE CHOP COOKIE
250ml/1 cup Tahini
100g/ 1/2 cup Sukin Gold, you can use any granulated sweetener but this one adds extra flavour if you want less sweetness reduce this
1 large egg, beaten
1tsp vanilla extract
1 tsp maple flavouring (optional), I think the maple flavour gives them a caramel taste
1/4 tsp salt, you can increase this if you want a more salty cookie
1 tsp baking soda
60g of sugar free chocolate chips
Preheat the oven to 175c/350f, lightly grease your skillet
Place all ingredients except the chocolate chips into a bowl and beat together until well combined and a sticky dough has been formed
Fold in the chocolate chips
Empty into your skillet and spread evenly
Bake for 15-20 mins depending on your oven
Allow to cool for 10 mins in the skillet then divide into portions, I made 16 portions but you could make 8 if you prefer bigger pieces.
Cool the cut pieces on a rack
Store in a airtight container
Thanks for this great, easy recipe! I’ve made it a couple of times now and I love how straightforward it is, and it tastes great! I’ve used two medium eggs instead one one large one and it still turned out well.
