This was so simple to cook, a good quick meal after work.

Serve with Low Carb Flatbreads


1 tbsp olive oil

1 onion, thinly sliced

3 garlic cloves, thinly sliced

300g tomatoes, coarsely chopped or unsweetened tinned chopped tomatoe

1 – 2 chillies, coarsely chopped (adjust to your taste)

1 tbsp white wine or apple cider vinegar

2 tbsp flat leaf parsley, chopped

100g Greek feta cheese, cubed

12 – 16 large prawns, peeled, cleaned

Heat oil in a pan or skillet

Add onions and fry until they begin to soften

Add garlic and chilli and fry for a few more minutes

Add tomatoes and vinegar and cook until the tomatoes soften and start to become a sauce

Add prawns and cook through

Just before serving add flat leaf parsley reserving a little to use for garnish

Place half of the feta in the bottom of the dishes

Pour saganaki over the cheese then crumble the rest over the top

Garnish with some parsley

      It serves 2-3 based on 2 it’s 5g carbs and 3g fibre, net carbs 2g
