I love stuffed mushrooms but every recipe I see contains breadcrumbs or subs that with almond flour. My partner does not like the texture when you use almond flour so I had to find a good way of doing them without.
They are served here with chicken breast wrapped in bacon and stuffed with garlic and herb goats cheese and roasted cauliflower with grated Parmesan.
I know a bit of a cheese fest but hey-ho I love cheese.
Keto Pesto Stuffed Mushrooms
1 ball of mozzarella
2-3 cloves garlic, minced
3 tsp pesto
1 tbsp grated Parmesan
2 large portobello mushrooms, stalks removed
Preheat oven to 180c/ 350f
Mash both cheeses, garlic and pesto together
Spray inside of mushrooms with olive oil
Stuff mushrooms with the cheese mixture
Bake in oven fo 40 mins
Serve topped with chopped fresh herbs
