TREATS IN A MUG IN SECONDS

Sometimes I crave a treat but don’t want to make a large cake, I’d eat it all too quickly. So to curb my cravings and not to be so greedy I’ve got into making mug cakes. Equivalent of one slice and I can’t have more plus only take minutes to make so its a quick fix. All recipes are for one servings except the espresso cake which is for 2.

MAPLE AND PECAN MUG CAKE

1 tbsp coconut flour

1/2 tbspErythritol granulated

1/2 tsp baking powder

2-3 pecan nuts, chopped

1/2-3/4 tbsp ground seed mix

2 tbsp Olive Oil or melted coconut oil or melted butter

1 large egg

5-8 drops liquid Stevia

1 tbsp sugar free maple syrup or a few drops of maple flavouring

Serve this with a little more Sugar-free maple syrup drizzled over the top and a little more of the chopped pecans plus of course some cream.

Or heat 2tbsp Sugar-free maple syrup in a small pan and heat until just before boiling add 3 tbsp double/heavy cream and simmer until thickening. Allow to cool slightly and pour.

CHOCOLATE MUG CAKE

1 tbsp coconut flour

1/2 tbspErythritol granulated

1/2 tsp baking powder

1 tbsp cocoa powder

1/2-3/4 tbsp ground seed mix

2 tbsp Olive Oil or melted coconut oil or melted butter

1 large egg

5-8 drops liquid Stevia

1/2 tsp vanilla extract

I topped this with a runny chocolate ganache (recipe below)

VANILLA MUG CAKE

1 tbsp coconut flour

1/2 tbspErythritol granulated

1/2 tsp baking powder

1/2-3/4 tbsp ground seed mix

2 tbsp Olive Oil or melted coconut oil or melted butter

1 large egg

5-8 drops liquid Stevia

1/2 tsp vanilla extract

When cooked I topthis with either Sugar Free Strawberry Jam or Blueberry Jamor Zesty Lemon Curd

Which, with the jam, made it like a jam steam pudding like my mum used to make.

METHOD FOR ALL CAKES

Mix all dry ingredients in your mug

Add wet ingredients and mix using a fork until all dry ingredients are combined

Microwave for 90 seconds, adjust this for your own microwave mine is 900w.

Serve.

CHOCOLATE GANACHE/POURING CREAM

3-4 tbsps double cream/heavy cream

40g/1.5oz dark chocolate, if unsweetened you may want to add some sweetening of choice.

Chop chocolate into small pieces

Heat cream so not quite boiling, I did this in the microwave

Add chocolate and allow to stand for a short while

Stir until all chocolate has melted

Add sweetening if required

Pour.

    They sound fab. Just wondered about the ground seed mix. What seed mix do you use? I’ll pribably used flaxseed for these…got loads of that!

      Flax seed is fine I get my ground seed mix from Lidl/Aldi. It comes ready done and includes chia, flax and linseed

      It’s a mix of ground linseed, hempseed and chia seed I buy it from Lidl/Aldi
